There seems to be a lot going on lately. With friends. With family. It's a strange time where every other day I hear the news of something else going on. It's a bit overwhelming.
Often when times like this come about, I turn to cooking. It's the one thing I can do to offer sustenance, warmth, and love to others in times of need. It keeps me busy. It makes me feel like I can contribute something to help. And it settles my nerves of sometimes anxious situations for me. And, most often when I need to burn some energy in the kitchen for others, I turn to this soup. It is a perfect combination of comfort food, while at the same time, still being healthy. I know it's appreciated- it's my go-to soup- so it's been received before and those who have had it feel it's vibrancy. It's bright and cheerful, and at the same time, soothes the soul.
